My family and I are doing a 30-day vegan challenge for the month of April and I’m so excited! I’ve been transitioning into a vegetarian lifestyle for nearly a year but my ultimate goal is to be vegan.
There are many health benefits to limiting or completely eliminating animal based products from your diet. I would encourage you to do some research and find out what works best for YOU! However, I will say the transition has been a lot easier than I thought it would be.
Over the weekend I made lunch and this was so good I just had to share! This is one of the many yummy meals in our 30 day vegan challenge!
